I started Charclusivo because Miami deserved better.
This is a city of taste — and yet the charcuterie here was an afterthought. Generic boards. Supermarket ingredients. Nothing that matched the people receiving them.
So I went to the source. Every meat, every cheese, every honey in our boxes is chosen from the European region that does it best — no shortcuts, no compromises. If a region has spent five hundred years perfecting one thing, that's where we go for that one thing. Nowhere else.
Every box is assembled the way I'd want it served to me. If it isn't right, it doesn't leave the kitchen.

Every ingredient comes from the region that made it famous — chosen for its story as much as its flavor, from artisans who've spent generations on a single craft.

Made the day it arrives
Boxes are handcrafted to order and delivered chilled, by hand, across Miami. A limited number leave the kitchen each day — that limit is how the quality survives.
III.
Right, or it doesn't leave
Every box is checked before the lid closes. And if anything still arrives below our standard, we make it right — no questions, no forms.

Aged a minimum of eighteen months and sliced paper-thin by hand, exactly as it has been for centuries.

Manchego DOP
Made from the milk of Manchega sheep grazing the same ancient plains for generations.

Hand-harvested from Sicilian groves that stand older than the towns surrounding them.

There is no production line here. Each box is composed one at a time — meats folded, cheeses cut, everything arranged the way it will be seen when the lid opens.
The last thing that happens before a box leaves is that someone looks at it and decides it's right. Most days, that someone is Mike.
